Recipe - Dawn's Mexican potato salad


Dawn's Mexican potato salad



2 lb red potatoes

1/2 bag frozen corn

1/2 cup mayo

1/2 cup sour cream

1 Tb lime juice

1 Tb taco seasoning

1/2 cup fresh cilantro

1 cup shredded cheese



Boil potatoes until soft. Place a colander in the sink and put frozen corn in it. Drain potatoes on top of the corn. Put drained potatoes and corn in large bowl. Cut potatoes with knife to small pieces. Let cool.

In another bowl mix mayo, sour cream, lime juice, taco seasoning. Add to potatoes. Toss in cilantro and cheese and you are ready to serve it up.

Fantastic fix for tired ole' potato salad!
